The other day I was on my weekly Zoom workout/ cocktail hour with my girls and my friend Ally whipped out this sandwich after the workout. It looked so good and of course had to try it. She has been getting her recipes from Thug Kitchen, which sounds like my kinda kitchen!
Here is her tasty sandwich from Thug Kitchen:
3/4 cup smoked almonds
3 cups cooked chickpeas
3 tablespoons lemon juice
3/4 cup chopped red onion (about 1/2 medium onion)
1/3 cup chopped fresh dill
1/3 cup chopped celery (about 2 ribs)
1 to 2 teaspoons of your favorite hot sauce
1/2 teaspoon salt
Ground pepper to taste
8 to 12 slices bread, toasted
Dijon mustard, lettuce, and tomato
Add all ingredients to the bowl and mash it up!!
Serve on a wrap or whole grain bread!
