Eating low carb can be tough at times, yet the other times, you get to eat this!!! The week I came up with this gem I think we ate it three days in a row. It taste like a cheat meal but it completely fits the macro balance. High fat, moderate protein, low carb. Check check check!!
First things first, prepare your eggs. I like mine to be in the middle of a soft to hard boil. Put 4 eggs in a pot of room temperature water. Turn on high until a boil. Cover and lower heat for 11 minutes. Remove from water and let sit in a bowl of cold water until you are ready for them.
Cut all vegetables and set a side. If you're anything like me, a few pieces may not make it to the plate.
For the turkey bacon, I recently discovered that you can bake turkey bacon! Feel free to cook it on the skillet, for me, baking it was a real time savor. Cook at 400 degrees for 12 minutes.
Time to make the chipotle mayo, the absolute best part! Combine mayo and chipotle seasoning throughly. I the past to reduce the fatI used 1 tbsp mayo, 1 tbsp cashew milk. It is definitely more liquidy but super tasty!

1 bouquet romain
6 slices of turkey bacon
1 cup of mixed vegetables and beans
1 1/2 tbsp organic mayo
1/2 - tbsp chipotle seasoning
